In 1.732 the first coffee growing were done in the monastery of the jesuíta´s priests called Seminario Menor de Popayán with seeds brought by them. Ever since, it has been created a deeply rooted coffee culture in the zone, supported by the Comité Departamental del Cauca (70 years), and the "Cooperativa de Caficultores del Cauca" (40 years).
With the backing of the coffee tradition, the guild institutions and the use of a technological package of the Federación Nacional de Cafeteros de Colombia, CAFÉ MONASTERIO DE POPAYÁN is produced: an origin coffee that fulfills all the international quality rules for this product. The development of the technological package, envisages as a premise the environment preservation especially the items related to the ground conservation and the ecological benefits, avoiding the contamination of the water.
This coffee presents high consistency in its physical grain properties and in its sensory features, making it different from the common coffees. That is why it is considered an especial colombian coffee with a defined origin: the Popayán tableland.
